Lobster Rolls

This one is super quick to make and my kid loves it.
Figure on one lobster tail per person for an average legal sized lobster.

You will need:
1 shelled lobster tail (meat only), cut into small cubes or chunks. The smaller the better IMO
1 celery stalk
1 TB finely cut onion (I cut mine as thin as possible, then dice it)
1 TB mayonaise
1 Tsp lemon juice

1/2 tsp chopped garlic
1/4 stick butter
Sea salt or Lawrys garlic salt
Pepper to taste
Rolls or hot dog buns if you are ghetto like me

Remove lobster tail and cut into small pieces. Melt butter in pan, add garlic when hot. Sprinkle salt onto lobster and grill in pan until done, cooked lobster turns from opaque to white. Remove from heat.

Toast your bread, when it is done split it. Take lobster that has been cooked and add the celery, onion, mayo, lemon juice and hot sauce if you like it a little spicy (I use syracha). Add a dash of pepper if you like pepper. Mix well until lobster has a creamy appearance. Add your lobster mix to the bread and eat.

The mayo mixes well with the lobster meat which already has butter and garlic in it, it makes a killer cream sauce on your lobster. My kid eats two of these at a sitting (one whole lobster).
